Tonights Supper

After being up at the Estate for much of this week, I needed some groceries, Ole Mother Hubbard's Cupboards were almost bare. So we collected ourselves and the boys and I headed out the door to get a few items.  Thus starts that never ending question of "whats for dinner" once you cook and clean up from one meal, you have to start planning for another- it does make one exhausted.

Tonight's meal had to do with Senior eating burritos for lunch, the boys were intrigued by them, but can defiantly do with out the re fried beans. Meat and Cheese Enchiladas was requested. And NW who usually requests a taco on enchilada night, actually said he would try them, as long  as there were no re fried beans involved, WHAT SO EVER with an Exclamation mark!

Instead of buying a dinner kit, I bought a can of the sauce because I assumed I had some store bought tortillas in the freezer..as you can guess when I got home, I did not. So, I jumped online and searched for a recipe.. most I found called for lard. I did not have lard, then I found this simple and delicious recipe at Cafe Sucre Farine:

Best Home Made Tortillas

I do not have a mixer, so I used the "dough function" on my bread machine to mix it. Once it was into a ball in the machine, I stopped the function and divided the dough into 16 parts.
I learned after the first two, to roll them out paper thin:

Cook them in a hot pan, but watch them closely as they can burn easily

Added a meat and cheese filler and poured enchilada sauce over them, then added some shredded cheese on top, baked for another 10 minutes...
Topped them with sour cream and served.

The end result was empty plates around the table. NW even invented something he called a "Tostito-Lada"  he put small spoon size bites into his tostito scoops...
And of course once you make the tortillas, you can bag them and freeze them...they store indefinitely in the freezer.

  1. The Mrs. Makes those alot. Usually her answer for whats for dinner when she doesn't want to commit is Mexican food and we get the enchilada things alot when it is her turn :)

On my nights it's Chicken Alfredo or Chili :)

Don't tell her but I like her enchiladas more....

  3. JUGM,

I printed this recipe because I don't have lard at home, just olive oil and it sounds good.
We eat all kinds of Mexican food here.

I love it when our guys ask , "What's for dinner" and they look at mom when their saying it. My reaction is to want to say, "What ever your making". Then I come back to reality and think oh no, I don't need a big mess in the kitchen to clean up and just go make dinner.

    1. I don't have lard either, so when I saw this one I decided to try it. And it really did come out great. The family loved them. Senior wants me to make more and do Breakfast burritos one morning.

Now, another supper is over and the age old question starts again for tomorrow night. Senior has made breakfast, and it was really good. he has done lunch a couple of times too. But I don't think I want the kids in the kitchen yet cooking... I could not imagine that mess.
All though, NW helped me roll these with the rolling pin.

  4. JUGM- Thanks for the recipe. My Mexican amigos use a masa mix that I now keep in mason jars (after a week in the freezer) as a backup plan.

The food looks great...my mouth is watering!

  6. OK. This I have to try. Homemade tortillas. Something else that's good and I can add to my list of make-it-yourself.

    1. I was shocked how easy they were to make, and tasted better then any store bought brand. When you make them, roll them toilet paper thin. I think you will like them.

  7. Senior Chief and the boys are lucky to have you. I am sure it's hard to think up good meals and cook them and clean up afterwards, but it sure makes a family feel like a family. We used to do that, but once the kids grew up and left, it wasn't really worth the trouble for just two of us. So now we usually cook something in the crockpot and just eat when we are hungry. We like to go out to some small quiet place once in awhile too.
